3 pounds or 6 cups cooked pumpkin
2 cans of direct coconut milk
Delecto Coconut Milk Powder 2 packs (50g)
1/2 teaspoon Spicy Hills Scotch Bonnet Pepper Powder
3 tablespoons Golden Brand margarine
3 tablespoons grated ginger
1/2 cup celery, finely chopped
3 tablespoons garlic (finely chopped)
1/2 cup onion, finely chopped
1/2 teaspoon nutmeg
1 sprig of thyme
2 teaspoons all-purpose seasoning
A pinch of salt
Pepper to taste
Method:
Boil the pumpkin in salted water until soft.
Place the pumpkin in a food processor or mash using the pumpkin’s cooking liquid along with 2 packets of Derek’s Coconut Milk Powder.
Melt Golden Brand margarine in a saucepan and sauté celery, garlic, ginger, onion and thyme until softened.
Add the flour and mix until a paste forms, then mix vigorously for 3 to 5 minutes.
Add Delect (canned) coconut milk, stir until completely dissolved, and simmer for 2 minutes.
Add the Spicy Hills Scotch Bonnet Pepper Powder and nutmeg.
Add the pumpkin/coconut puree and simmer over low heat for 10 minutes. Season with salt.
Serve with warm garlic bread and a tossed salad.

Ingredients for pastry:
2 cups all-purpose flour
⅗ cup Golden Brand Margarine
1/4 teaspoon salt
3 tablespoons cold water
Method:
Cut the margarine into small pieces, add the salt and mix into the flour until it resembles breadcrumbs.
Gradually add the water and mix until a dough forms.
Cover with plastic wrap and refrigerate for at least 30 minutes.
Divide it into two and roll one out to fit into a pie plate, then store the other in the fridge.
Duration: Approximately 40 minutes
Coconut Curry Chicken Ingredients:
1 pound boneless chicken thighs (cut into small pieces)
1 can of Derek coconut milk
⅛-¼ teaspoon Spicy Hills Scotch Bonnet Pepper Powder
2 tablespoons curry powder
1 ½ tablespoons garlic, minced
1 sprig of thyme
A little allspice powder
1 cup onion
1/2 cup green pepper
1 cup boiled Irish potatoes (diced)
1/2 cup mixed vegetables
1 tablespoon cornstarch mixed with water
Method:
Season boneless chicken thighs with salt and black pepper.
Heat the oil and add the curry powder, garlic, thyme and a little allspice.
Add Spicy Hills Scotch Bonnet Pepper Powder.
Add chicken and cook for at least 15 minutes.
Add the onion and peppers and adjust seasoning to taste.
Derek Pour in the coconut milk and simmer for 5-10 minutes, then add the cornstarch and warm water, stir and leave to cool.
Pour the cooled mixture into the unbaked pie crust and add the cooled potatoes.
Roll out the remaining half of the dough, wet the edges with water, place on top and press the edges with your fingertips and a fork to seal.
Brush with egg wash (1 egg and 1/2 cup water).
Bake at 350-360°F for about 20-25 minutes or until golden brown.
Duration: 1 hour
Allow to cool and serve with salad.
