KINGSTON, Jamaica – The excitement of the 2024 Olympic Games was palpable in Kingston last Friday as the Jamaica Pegasus Hotel, in collaboration with Saint International, hosted an exclusive viewing party and fashion show for the Opening Ceremony, broadcast live from Paris.
The event drew a vibrant crowd to the hotel lobby, where attendees were treated to a unique culinary experience. Executive Chef Mark Cole and his team curated an Olympic-inspired menu that creatively blended French and Jamaican flavors, adding a distinct local touch to classic European fare.
“The menu is both French and Jamaican,” Cole explained to Thursday Food. “Waffles are popular in Europe, so we added a twist with barbecued pulled pork. We also featured smoked swordfish with capers, adding a touch of Jamaican spice. One of the most interesting items was liver pâté, made with chicken liver instead of goose foie gras, a more affordable but equally delightful alternative. We also combined Sherika Jackson’s bread pudding with Shelly-Ann’s blackberry cake for a fusion of Jamaican and European flavors.”
The fashion show, presented by Saint International, showcased a blend of high fashion and local flair, celebrating Jamaica’s vibrant culture and the spirit of the Olympics. Attendees enjoyed a memorable evening filled with culinary delights and sartorial elegance, all while cheering on Team Jamaica.
