Following the recent passage of Hurricane Beryl, Delect has embraced the tradition of cooking on a coal stove, recognizing that power outages are common during hurricane season from June to November. Featuring Delect’s corned beef, better known as “Brie Beef,” this dish perfectly combines the flavors of corned beef with the rich flavors of roasted breadfruit and fresh callaloo. Cooking time: 1 hour 30 minutes
material:
• 2 cans of direct corned beef
• 1/2 cup Delicious Tomato Ketchup
• 1 cup onion (chopped)
• 1/2 cup green pepper, chopped
• 3 plum tomatoes
• 6 cloves of garlic
• 2 spring onions
• 1 sprig of thyme
• 1/2 teaspoon black pepper
Method:
Season the callaloo, steam it and set aside.
Roast the breadfruit and allow it to cool for 30 minutes before peeling.
Peel the breadfruit, cut it in half and remove the core.
Sauté fresh herbs (onion, bell pepper, tomato, garlic, scallion, thyme) until softened.
Add the Delect corned beef and stir fry for 5 minutes or until heated through.
Stir in the direct tomato ketchup and remove from heat.
Place the steamed callaloo into the breadfruit halves and top with the corned beef mixture.

material:
• 1 cup Delecto Pink Lemonade Concentrate
• 2 cups soursop pulp (seeds removed)
• 2 cans of direct coconut milk
• 1 tablespoon vanilla extract
• 1/2 teaspoon nutmeg
• 1/2 teaspoon cinnamon
Method:
• Remove the seeds and extract the soursop pulp (30 minutes).
• In a food processor or blender on high speed, add the Delect coconut milk and pulse until smooth.
• Add 1 cup of Delecto Pink Lemonade Concentrate.
• Combine other ingredients and mix thoroughly.
Serve over ice, garnish as desired and enjoy.
